I'm just going to get straight to the recipe with this one because the name says it all! I like to make a whole bunch of waffles at once, freeze what we don't eat and just toast them up when we're ready for more. I also just made a super happy mistake of leaving a slice in the oven too long. The crispy wafer was delicious with a spread of Gopal's sprouted walnut butter & some Enjoy Life dark chocolate chips! I'm thinking I might accidentally do this to have a "waffle cone" with my next round of NadaMoo or Luna & Larry's! (All of which we can sell to you with a smile!)

Buttermilk Waffles & Pancakes
Yields about 2-3 waffles or 4-6 smaller pancakes.
1/2 cup Kimmi's Gluten Free Flour
1 farm fresh egg
1/2 cup buttermilk
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 tablespoon unrefined sugar
1/2 teaspoon vanilla
1 teaspoon grass-fed collagen (optional but helps with the fluff)
1. Mix all ingredients together and let rest at least 20 minutes.
2. Prepare waffle iron or skillet & cook according to directions.
3. Serve with butter and honey. Maybe some fruit if you're feeling it!
